Which one should you buy?
The question is not which is best. It is which job the matcha has to do. Almost all of what makes matcha expensive — long shading, an early pick, slow stone milling — is tasted when it is whisked with water and drunk plain, and mostly masked once milk, ice, and sweetener are in the cup.
