Uji is the origin most people mean when they say "real matcha", and it carries a price to match. This is our answer for the menu item where that origin actually matters — a signature matcha latte, a tasting flight, a retail tin under your own label — while the rest of your volume runs on something cheaper.
Because it sits above our everyday grades, it rewards being treated well: cooler water, a lower dose, and a drink that does not bury it under syrup. If your matcha menu is entirely sweetened and iced, most of what you pay for here will not reach the customer, and one of our Nara grades will serve you better.
Availability is limited. Uji supply is constrained by farmland and a single annual harvest, so we do not promise open-ended volume on this one. If you are planning a menu around it, tell us the quantity and timing when you enquire.

How to use it
- Hot latte
- 3g matcha, 60ml water at about 80°C, then 180-200ml milk.
- Iced latte
- 3-4g matcha, shake or whisk with a little water first so it does not clump on ice.
- Whisked plain
- 2g matcha, 70ml water at 70-80°C. Water above about 85°C pushes it bitter.

Storage
Keep the bag sealed, cool, dry, and out of direct light. Matcha loses colour and aroma to air, heat, and time rather than spoiling, so buy a quantity you will get through in a few months rather than a year of stock to chase a discount.

- Is this ceremonial grade?
- We do not sell it on the ceremonial label. It is our premium Uji option, priced for cafés that want the origin on the menu rather than for tea ceremony. If you are whisking and serving it plain, taste the sample and judge it for that job.
- Why is availability limited?
- Uji supply is constrained by farmland and a single annual harvest. We would rather say so than take an order we cannot repeat. Tell us your quantity and timing and we will confirm what we can hold.
- Who selects the matcha?
- We do, in Japan. NOT THE MATCHA is run by a Japanese company and we buy directly from Japanese producers. Affordable matcha usually raises the question of who actually chose it - this is our answer.
- Can I order a sample before buying a kilogram?
- Yes. Every product is available as a 20g sample. Make the drink you actually sell, at your usual dose, and taste it before committing to bulk.
- How many drinks does 1kg make?
- About 333 lattes at 3g per drink, 500 at 2g, and 250 at 4g. Divide the price per kilogram by that number to compare suppliers on cost per drink.
